From the Sign Up Tools tab, you can add, edit or delete a field on your sign up form:
To Edit the field, simply click within the field on the form itself.
To Delete a field, click into the chosen field and click the orange Delete Field button on the left hand side.
You can also edit existing Field data (and choose whether or not certain fields are required) in Contacts > Details > Fields and Tags:
